An averaged sized potato of 150 grams has vitamin C, potassium, vitamin B6, thiamin, riboflavin, folate, niacin, magnesium, phosphorus, iron, and zinc. The only vitamins missing that humans need are vitamins A and D, yet if the potato is served with either butter or milk, both of those are fulfilled!
While nutritionists wouldn’t recommend taking on this diet, it is technically possible for survival.

Now if you are fed up with the conventional Mashed Potatoes, why not try this one?
CHUNKY MASHED POTATOES
Ingredients:
4 medium size Russet or Yukon potatoes
3 - 4 tablespoons butter
Milk (optional)
freshly ground black pepper
1 teaspoon salt (if the butter you use is unsalted. Otherwise, a pinch is required)
chopped or sliced onion chives
Procedure:
*Wash and peel off the skin of the potatoes and cut them into cubes.
*Put the potatoes in a pot and fill with cold water to cover the potatoes.
*Boil the potatoes with high heat then turn to medium heat and cover the pot with lid, shimmer for another 15 to 20 minutes. Stick a toothpick or fork into the potatoes to check if they are done. Slightly over-cook the potatoes and it will make the mashing easier. Russet potatoes with bigger cubes and Yukon potatoes might need a slightly longer cooking time.
*While waiting for the potatoes to cook, take the butter out from the fridge and let it soften under room temperature.
*Drain the potatoes when it is ready.
*Add butter on the warm potatoes and mashed it with fork.
*Add milk if you prefer smoother & creamier texture.
*Add salt, ground black pepper to taste.
*Garnish with chives and serve while it is still warm.
Serves 4... or 1 if you tend to eat the whole dish 4 times the whole day.
